Ingredients:

  • 250g paneer (cubed)
  • 2 tbsp oil or ghee
  • 1 large onion (finely chopped)
  • 2 tomatoes (pureed or finely chopped)
  • 1-inch ginger (grated)
  • 2-3 garlic cloves (minced)
  • 2-3 green chilies (slit)
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 cup water or as needed
  • 1/4 cup cream (optional, for richness)
  • Salt to taste
  • Fresh cilantro (for garnish)

Instructions:

  1. Prepare the paneer:

    • If you prefer soft paneer, soak the cubes in warm water for 10-15 minutes. If you like it crispy, you can lightly fry the cubes in some oil and set them aside.
  2. Heat the oil or ghee in a pan:

    • Add cumin seeds and let them splutter.
  3. Sauté onions:

    • Add the chopped onions and sauté until golden brown. This usually takes about 5-7 minutes.
  4. Add ginger, garlic, and chilies:

    • Stir in the grated ginger, minced garlic, and slit green chilies. Sauté for another 2 minutes until fragrant.
  5. Cook tomatoes and spices:

    • Add the pureed or chopped tomatoes to the pan. Cook until the oil begins to separate from the masala (spices and tomato mixture). This usually takes around 5 minutes.
    • Stir in turmeric powder, red chili powder, coriander powder, and salt. Cook for another 2 minutes.
  6. Add water:

    • Pour in the water to adjust the consistency of the curry. You can add more or less depending on whether you want a thicker or more gravy-like curry.
  7. Add paneer cubes:

    • Gently add the paneer cubes to the curry and stir carefully to coat them with the gravy. Let it simmer for 5-7 minutes to allow the paneer to absorb the flavors.
